Buttermilk Berry Shortcakes
Makes 8
2 cups flour
2 Tbsp sugar, plus more for sprinkling
2 tsp baking powder
½ tsp salt
10 Tbsp cold unsalted butter, cut into pieces
¾ cup buttermilk
1 egg, whisked well, for egg wash
Whipped cream
Fresh berries
Preheat oven to 375°F. Line a large baking sheet with parchment paper and set aside.
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in butter with a pastry blender until mixture resembles coarse meal. Add buttermilk, and mix with a fork just until the liquid is absorbed. Turn out onto a clean surface and bring together with your hands, kneading a few times if needed. Shape dough into a rectangle and cut into 8 even pieces. Shape each piece into a disk and place on the prepared baking sheet. Brush the tops with egg wash and sprinkle with sugar. Bake biscuits until puffed and lightly browned on top, about 20 minutes. Let cool. Serve with whipped cream and berries.
