Chocolate Turtle Apple Pops
2 large Granny Smith Apples, washed and dried
10 Lollipop sticks
12 ounce bag semisweet chocolate chips
1 Tablespoon coconut oil
20 individually wrapped caramels, unwrapped
1 Tablespoon water
½ cup pecans, chopped
Line a baking sheet or plate with waxed paper.
Cut apples into 5 equal slices, about ½ – ¾ inch thick. Make sure they are thicker than your lollipop sticks. If desired, slice off a thin piece from the rounded ends so they will lay flat on the baking sheet. Push the lollipop sticks into the bottom of each slice, then pat apples dry on both sides with paper towels.
Place the chocolate chips and coconut oil into a shallow dish. Microwave at 50% power for 2 minutes, stirring every 30 seconds until completely melted and smooth. Dip apple slices into the chocolate, turning to coat all sides, then place on prepared baking sheet or plate. Freeze for 15 minutes, or until chocolate is set.
Meanwhile, place caramels and water into a microwave-safe bowl with a pour spout. Microwave on HIGH for 1 minute. Stir, then continue to microwave until completely melted, about 1 more minute. Remove apples from the freezer and drizzle caramel on top. While caramel is still gooey, sprinkle pecans on top. Freeze again for 30 minutes to set.
Enjoy immediately, or store, covered, in freezer for up to 4 weeks. Bring to room temperature before serving.
