Mexican Coleslaw

Mexican Coleslaw
Serves 6-8
¾ cup mayonnaise
¼ cup sour cream
2 Tablespoons lime juice
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cumin
½ teaspoon salt
½ teaspoon honey
1 14.5 ounce can black beans, rinsed and drained
1 medium red pepper, diced (about 1 ¼ cups)
1 cup grilled corn
½ cup minced cilantro
1 jalapeño pepper, seeds removed and finely diced
1 14 ounce bag coleslaw mix
In a large bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, onion powder, cumin, salt, and honey. Fold in the black beans, red pepper, corn, cilantro and jalapeño. Add coleslaw mix and toss until coated.
